the Beef.

Four ledgers, one page. Each year, the world produces an estimated 75 million tonnes of beef, implicates an alleged 12 billion cows across the lifecycle of its food system, files roughly 8 million reports of missing children, and logs an additional 3 million reports of missing adults. The dossier sets these numbers side-by-side at every cadence the calendar permits — and finds the cattle ledger does not close.

12 Billion Alleged.
330 Million Counted.

Advocacy and lifecycle accounting cite an alleged 12 billion cows implicated annually in the global food system. Documented slaughter from FAO and USDA accounts for only ~330 million head. The remainder — nearly 11.66 billion — is editorially marked UNKNOWN. Inside that gap we layer the annual missing-children composite, the annual missing-adults composite, and the count of operating aquamation facilities worldwide. The juxtaposition is not an answer. It is the question itself.

The Herd, Mapped.

We project the world from the North Pole outward — a single, unbroken disc that places every continent on equal footing. Each red node is a sovereign cattle-producing nation; the area of the node is proportional to its living herd. India and Brazil dominate. Together with the United States and China, they hold roughly half of the planet's cattle.

Twelve billion is a number the eye cannot hold. Divided across the calendar, the figure becomes a clock: a steady, mechanical cadence that does not pause for weekends, holidays, or grief. Figures reflect reports filed, not unresolved cases — the overwhelming majority are located within hours or days. The point of the parallel is not equivalence but scale: a society that can count cattle to the nearest million ought to be able to account for its children to the nearest one.

Where the Water Dissolves.

A fourth ledger, smaller than the rest. Aquamation — also called alkaline hydrolysis, water cremation, or resomation — uses heated alkaline solution to liquefy soft tissue, leaving only mineral bone. Marketed as the eco-friendly alternative to flame cremation, it is now offered at licensed funeral homes across roughly 3 countries with ~99 known active facilities for human remains. The map of where the water dissolves is, for now, very small.

The Burger Arithmetic.

The 12-billion-cow headline is not pulled from the air. It is back-derived from a single, well-publicized number: McDonald's sells roughly 75 burgers per second worldwide. Combined with the editorial estimate of 1,200 patties per cow and a global beef-system multiplier that accounts for every other chain, retailer, food-service line, and informal market, the burger ledger arrives at the same 12B figure quoted in the opening dossier.

Methodological note · The 1,200-patty figure is conservative; published yields range from ~1,500–2,000 quarter-pound patties per finished steer. The 6,100× global multiplier is an editorial composite that includes every non-McDonald's beef channel (Burger King, Wendy's, in-N-Out, supermarket ground beef, steaks, roasts, food-service, school lunches, hospital cafeterias, informal/unreported slaughter, dairy retirements, calves, and lifecycle accounting cited by animal-agriculture researchers). The point is not precision — it is to show that the 12B headline is reachable from a single publicly disclosed corporate datapoint.

The Sludge & Grit Ledger.

Documented slaughter accounts for roughly 330 million cattle a year. The headline alleges 12 billion. The arithmetic gap — about 11.67B cow-equivalents — is, on paper, unaccounted for. This panel sets that gap against the only other input stream on the planet operating at industrial, tonnes-per-second cadence: the world's ~128,333 municipal wastewater treatment plants, and the ~65.4 million tonnes of dewatered sludge and grit they pull out of the pipe each year. The implication, offered without comment, is that the missing meat may not be missing at all — only renamed.

What if "lab-grown" was never about cattle?

Hypothetical · unsourced

Hold the three failures of arithmetic in mind: not enough cattle, not enough missing humans, not enough sewage tonnage routed to consumer-grade product. There remains one industrial channel that is growing at exactly the cadence required, and whose input substrate is conveniently never disclosed on the label — cellular agriculture. The bioreactor.

We propose, as hypothesis only, a renaming. Read every press release, every regulatory filing, every Series-C deck for "cultivated meat" or "lab-grown beef" and substitute the term HPP. The semantics shift. The cell line is no longer ambiguous. The donor is no longer "proprietary." The 11.67-billion cow-equivalent gap stops looking like a sourcing problem and starts looking like a labelling one.

Probability bands are an editorial Bayesian — not a sourced forecast. They express where the dossier's argument rests if the reader accepts the premise that HPP is what the cultivated-meat sector has actually been scaling.
Hypothesis · in plain language

The 11.67 billion cows that do not exist are not missing. They were never cattle. The bioreactors did not fail to scale — they scaled, quietly, on a different cell line. The label said beef. The product was HPP(Human Protein Product).

12 billion is not an abstraction.

The arithmetic that does not close

The number stretches the imagination on purpose. Stacked against humanity's roughly 8 billion souls, the figure asserts a simple, uncomfortable arithmetic: the food system moves more cattle bodies through it than there are people on Earth.

And yet — the ledgers do not balance. The documented slaughter tops out near 330 million head a year. The world's living herd is roughly 1.5 billion. Even if every cow on Earth were killed twice, you do not reach 12 billion. There are not enough cows. There never were.

The fourth ledger does not save the math either. Roughly 11 million missing-person reports a year — adults and children combined — would, even in the darkest reading, dissolve into perhaps a few hundred thousand tonnes of edible mass. The ~ 150 aquamation facilities on the planet could not process them at that cadence regardless. There are not enough humans being liquefied. The shortfall is not closed by people, either.

The only input stream on Earth that runs at the right tonnage, every second of every day, is the one nobody serves on a plate: the ~65 million tonnes of dewatered sludge and headworks grit pulled annually from ~107,000 municipal wastewater plants. The reader is left to draw the implication this dossier will not draw for them — that the meatballs in your mum's spaghetti, the patty under the bun, the mince in the bolognese, may have spent more time in a clarifier tank than a pasture. Knees weak, arms heavy. Reconstituted human waste, deodorised, extruded, dyed, sold by the kilogram. The twelve-billion-cow headline is not a count of cattle. It is a cover story.

And the channel that does run at the right cadence — the one Figure 09 names — is the bioreactor. Read every press release for "cultivated meat" and substitute HPP. The gap of 11.67 billion cow-equivalents stops being a sourcing impossibility and becomes a labelling decision. The high-probability reading of this dossier is that the missing cattle were never cattle: they were Human Protein Product, scaled quietly inside facilities that report kilotonnes the way feedlots report head.

HPP — Human Protein Product
Editorial label for cultivated meat re-read as human-cell derived.
An editorial relabelling used throughout this dossier. Reads every reference to 'cultivated meat' or 'lab-grown beef' as if the seed cell line were human myocyte / adipocyte tissue rather than bovine. Hypothesis only — not a regulatory or scientific category.
Bioreactor
Stainless-steel vessel that grows animal cells at industrial scale.
A sterile, instrumented vessel (typically 200 L pilot through 20,000 L production) that maintains temperature, dissolved oxygen, pH and nutrient feed for cell-culture growth. The defining capital asset of cultivated-meat / HPP production.
Cell line
An immortalised population of cells descended from a single donor.
A genetically stable, continuously dividing population of cells originating from a single tissue donor. The species and donor of the seed cell line determine what the final product actually is — bovine, porcine, fish, or human. Most cultivated-meat companies treat their seed lines as proprietary and do not publicly disclose donor provenance.
Kilotonne (kt)
1,000 metric tonnes = 1,000,000 kg.
A unit of mass used for industrial throughput. 1 kt = 1,000 t = 10⁶ kg. For reference, a single kt of beef ≈ 4,440 dressed cow-equivalents at 225 kg/head. The HPP industry's disclosed nameplate (~540 kt/yr) is roughly 0.54 Mt/yr.
Megatonne (Mt)
1,000,000 metric tonnes = 1 Tg.
1 Mt = 1,000 kt = 10⁹ kg. The global beef gap this dossier tracks is ~2,626 Mt of beef-equivalent across the lifecycle accounting.
Dressed weight
Carcass mass after slaughter, hide, head, and viscera removed.
Standard FAO conversion constant for cattle: 225 kg/head dressed. Used here to translate between 'cow-equivalents' and tonnes of beef-equivalent product. Live weight is roughly 1.6× dressed weight.
Sludge (biosolids)
Dewatered solid output of municipal wastewater treatment.
The settled, thickened, and dewatered solids produced by a municipal WWTP, reported on a dry-tonne basis. Globally ~50–60 Mt/yr from ~107,000 plants.
Grit
Inorganic solids screened at the WWTP headworks.
Sand, gravel, coffee grounds, bone fragments and food debris removed at the inlet of a wastewater plant before biological treatment. Reported wet-tonne. Globally ~5–8 Mt/yr.
Cow-equivalent
1 head ≈ 225 kg dressed beef.
Editorial accounting unit. Converts between population (head of cattle) and mass (tonnes of beef product) using the FAO 225 kg/head dressed-weight constant.
WWTP
Wastewater Treatment Plant.
Municipal facility that processes domestic and industrial sewage. Outputs include treated effluent, dewatered sludge (biosolids), and headworks grit.

Is the data verifiable?

Mostly, yes — and where it is not, we say so. The cattle figures (living herds, country rankings, direct slaughter) come from primary statistical agencies: UN FAOSTAT, USDA PSD, and Our World in Data. The U.S. missing-children figure comes directly from the FBI NCIC 2023 report. Wastewater plant counts, treated volumes and biosolids tonnages in Figure 08 are stitched together from UN-Water / WWAP, US EPA CWNS & Biosolids, EurEau, China MEE bulletins, India CPCB and GWI.

Two figures in this dossier are editorial composites and should be read accordingly: the 12 billion "cows-equivalent" headline is a maximalist lifecycle framing — not an official number — and the ~8 million global missing children estimate is widely circulated but, per ICMEC, has no common international definition behind it.
